This bone dry white wine is made from 90% Vernaccia, an ancient grape variety found only in San Gimignano. Around 10% Malvasia and Riesling grapes are also blended in. All grape bunches are pressed very gently, then the juice is fermented cool, meaning as slowly as possible. Bottling in early spring means the wine retains all those characteristics Vernaccia is famous for, especially if consumed young: a rich creamy texture with mouthwatering green apple and citrus flavours. With ageing Vernaccia develops savoury almond, flint and liquorice characters.
